How To Make the Perfect BLT-E

Ingredients:
2 eggs
1 Tbsp butter
2 Tbsp high-heat oil
1/2 loaf country bread (or favorite unsliced loaf)
4 slices bacon
4 large green-leaf lettuce leaves
1 ripe tomato, sliced 1/4 inch thick
1 Tbsp mayonnaise
1/2 Tbsp Dijon mustard
Pinch of sea salt
Black pepper to taste

Method
1. Prep bread & sauce:
Cut the loaf into four 1/2-inch slices. Mix mayonnaise and mustard; set aside.
2. Cook bacon & toast bread:
Heat a cast-iron skillet over medium. Cook bacon 3–4 minutes per side until crisp. Transfer to a paper towel. Pour off excess grease but don’t wipe the pan. Add 1/2 Tbsp butter and toast the bread until golden; flip, add remaining butter, and toast the other side.
3. Fry the eggs:
In a nonstick pan, heat oil over medium. Crack in the eggs, season, and cook until the whites set. Gently flip and cook 30–60 seconds to keep yolks runny. Remove to a plate.
4. Assemble:
Spread the mayo-mustard on the two bottom slices. Layer lettuce, tomato, bacon, and a fried egg. Top with remaining bread slices.
